INGREDIENTS

  • 1 lb ground beef
  • ½ onion (diced)
  • 1–2 jalapeños (chopped)
  • ½ cup diced tomatoes or salsa
  • Handful baby spinach
  • 2 tbsp taco seasoning (your mix)
  • ½ cup refried beans (base)
  • ¾ cup shredded cheddar (divided)
  • 2 zero-net-carb tortillas, cut into strips (lightly toasted)
  • ¼ cup crushed pork rinds (chicharrónes) for topping
  • Sour cream + green onions to finish

DIRECTIONS

  1. Brown beef with onion and jalapeño; season. Stir in tomatoes and spinach.
  2. Spread refried beans evenly in a cast-iron skillet; top with beef mixture.
  3. Sprinkle half the cheddar over the beef. Tuck in toasted tortilla strips and finish with remaining cheese and crushed pork rinds.
  4. Bake at 400°F for 8–10 minutes until bubbly and lightly crisped. Drizzle thinned sour cream and scatter green onions to serve.
